Punjabi garam masala

Fragrant, cardamom-rich spice blend with mace and nutmeg. Makes 2 cups

A heady North Indian garam masala heavy with cardamom, cumin and pepper, rounded out with mace, nutmeg and fennel. The spices are ground raw rather than roasted, so the blend stays bright and perfumed. Use it in rich Punjabi curries such as chole, rajma and paneer makhani.

Method

0/3 done
  1. Step 1: Crack 3 whole nutmegs into small pieces with a rolling pin or pestle, so they grind easily.

  2. Step 2: Grind 3 ½ oz cumin seeds, 2 ⅓ oz black peppercorns, 1 ¼ oz fennel seeds, ½ oz cinnamon sticks, ½ oz bay leaves, the nutmeg, 2 ⅝ oz green cardamom seeds, 1 ¼ oz coriander seeds, ⅔ oz cloves, ⅔ oz mace and ½ oz ground ginger to a fine powder in a grinder, in batches.

  3. Step 3: Sieve the powder and grind any coarse bits left in the sieve again. Store in an airtight jar, away from light and heat, and use within 3 months for the best flavour.

Chicken tikka masala

Marinating the chicken in spiced yoghurt keeps it tender, and a few minutes under a hot grill gives it the smoky char of a tandoor. The sauce is rich but not heavy, finished with a little cream and dried fenugreek leaves.

Khichi sambhar

A bright red, tangy Gujarati masala, like a dry pickle masala made with split mustard and fenugreek seeds and sharpened with lemon. It's sprinkled over steaming khichu (khichi), and it's just as good with theplas or a drizzle of oil as a quick dip.

Chana masala

A North Indian staple that comes together from the store cupboard. Toasted cumin, slow-softened onion and a good spoonful of garam masala give tinned chickpeas real depth. Serve with rice, naan or a stack of warm rotis.
