Samosa chapaties (samosa pastry)

Thin, layered pastry sheets for samosas and spring rolls. Makes 8 rounds

Samosa chapaties (patti) are paper-thin wrappers for crisp samosas. Two rounds are rolled out together with oil and flour between them, lightly roasted, then peeled apart into two very thin sheets. Cut them into strips for samosas, or squares for spring rolls.

Method

0/8 done
  1. Step 1: Mix 7 oz plain flour, 1 tbsp lemon juice and 1 ½ tsp salt and bind into a firm dough by adding ½ cup ice-cold water a little at a time.

    5 min
  2. Step 2: Divide the dough into 8 portions.

  3. Step 3: Take two portions and roll each into a small round, about 8 cm across. Spread a little 2 tbsp oil over each round with a teaspoon, dab with flour, and place one on top of the other, oiled sides facing each other.

  4. Step 4: Gently roll the pair out into a thin chapati, 25 cm across.

  5. Step 5: Roast the chapati on a griddle on a very low heat, lightly on both sides, just until it firms up without browning.

    2 min
  6. Step 6: Take it off the griddle and, while it's warm, gently peel the two layers apart without tearing them.

  7. Step 7: Make the rest of the chapaties the same way and wrap them in a muslin cloth to keep them soft.

    8 min
  8. Step 8: Cut the chapaties to the size you need: long strips for samosas, squares for spring rolls.

Chicken tikka masala

Marinating the chicken in spiced yoghurt keeps it tender, and a few minutes under a hot grill gives it the smoky char of a tandoor. The sauce is rich but not heavy, finished with a little cream and dried fenugreek leaves.

Khichi sambhar

A bright red, tangy Gujarati masala, like a dry pickle masala made with split mustard and fenugreek seeds and sharpened with lemon. It's sprinkled over steaming khichu (khichi), and it's just as good with theplas or a drizzle of oil as a quick dip.

Chana masala

A North Indian staple that comes together from the store cupboard. Toasted cumin, slow-softened onion and a good spoonful of garam masala give tinned chickpeas real depth. Serve with rice, naan or a stack of warm rotis.
